- Preheat oven to 400°F (200°C). Dice the potatoes and slice the smoked sausage. Set sausage aside.
- In a large bowl, toss diced potatoes with olive oil, ranch seasoning, garlic powder, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet. Bake for 20 minutes until edges begin to crisp.
- Remove from oven, add sliced smoked sausage over potatoes, and return to bake for 15–20 minutes.
- Sprinkle shredded cheddar cheese over the top and bake for an additional 5–7 minutes until cheese is melted and bubbly.
- Garnish with green onions or chives and serve hot.
