  • 4 cups russet potatoes diced into bite-size cubes
  • 12 oz smoked sausage sliced into rounds
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream or ranch dressing
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 2 tbsp chopped green onions or chives for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Dice the potatoes and slice the smoked sausage. Set sausage aside.
  2. In a large bowl, toss diced potatoes with olive oil, ranch seasoning, garlic powder, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet. Bake for 20 minutes until edges begin to crisp.
  4. Remove from oven, add sliced smoked sausage over potatoes, and return to bake for 15–20 minutes.
  5. Sprinkle shredded cheddar cheese over the top and bake for an additional 5–7 minutes until cheese is melted and bubbly.
  6. Garnish with green onions or chives and serve hot.

Try variations like adding bacon, vegetables, or spicy seasoning. Store leftovers in the fridge for up to 4 days and reheat in oven for best texture.
