  • 2 cans (14 oz) artichoke hearts drained and quartered
  • 1/2 cup seasoned breadcrumbs
  • 3/4 cup Parmesan cheese grated
  • 1/2 cup mozzarella cheese shredded, optional
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lemon juice and zest
  • salt and pepper to taste
  • 1 tbsp parsley chopped, for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a mixing bowl, combine artichoke hearts, breadcrumbs, Parmesan, mozzarella, olive oil, garlic, lemon juice and zest, salt, and pepper.
  3. Toss gently to ensure the artichokes are well coated with the cheesy breadcrumb mixture.
  4. Transfer the mix into the baking dish, spreading it evenly.
  5. Bake for 25-30 minutes until golden and bubbly.
  6. Garnish with chopped parsley before serving.

Notes

For added flavor, try adding a pinch of red pepper flakes. This recipe can be made gluten-free by substituting the breadcrumbs with a gluten-free version. Great for parties, game nights, or as a delicious side!
