Ingredients
  

Caribbean Jerk Chicken
  • 4 chicken breasts or thighs boneless, skinless
  • 2 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lime juiced
  • salt and pepper to taste
Pineapple Salsa
  • 1 cup fresh pineapple diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/2 red bell pepper diced
  • 1 lime juiced
  • chili flakes optional

Method
 

  1. In a bowl, combine jerk seasoning, garlic, olive oil, lime juice, salt, and pepper. Add the chicken and coat well. Let marinate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the chicken for 5–7 minutes on each side, or until fully cooked and slightly charred.
  3. While the chicken cooks, prepare the pineapple salsa: mix pineapple, red onion, bell pepper, cilantro, lime juice, and optional chili flakes in a bowl.
  4. Slice the cooked chicken and serve it over rice, quinoa, or salad, topped with the pineapple salsa.
