- In a bowl, combine jerk seasoning, garlic, olive oil, lime juice, salt, and pepper. Add the chicken and coat well. Let marinate for at least 30 minutes.
- Heat a grill or skillet over medium-high heat. Cook the chicken for 5–7 minutes on each side, or until fully cooked and slightly charred.
- While the chicken cooks, prepare the pineapple salsa: mix pineapple, red onion, bell pepper, cilantro, lime juice, and optional chili flakes in a bowl.
- Slice the cooked chicken and serve it over rice, quinoa, or salad, topped with the pineapple salsa.
