- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter.
- In a saucepan, melt ½ cup butter over low heat. Add brown sugar and stir until dissolved. Add cinnamon and lemon juice. Pour into greased cake pan.
- Arrange sliced apples over the caramel layer in concentric circles.
- In a bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, mix eggs, melted butter, milk, and vanilla. Combine with dry ingredients until just mixed.
- Gently pour batter over apples and smooth the top.
- Bake for 35–45 minutes until golden and a toothpick comes out clean.
- Cool for 10 minutes, then invert onto a plate. Serve warm with ice cream or whipped cream if desired.
Notes
Try adding chopped pecans to the caramel for texture or a pinch of nutmeg in the batter for holiday flair. Avoid overmixing to keep the cake fluffy.
