- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- Mix graham cracker crumbs, melted butter, and sugar. Press into baking dish. Bake for 10 minutes, then let cool.
- In a bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time, and vanilla. Pour over cooled crust.
- In a saucepan, melt butter. Add diced apples, brown sugar, and cinnamon. Cook for 5–7 minutes until tender. Let cool slightly.
- Spoon apple mixture over cheesecake layer. Drizzle with caramel sauce.
- Bake for 25–30 minutes. Cool completely, then chill for at least 2 hours before slicing into bars.
Notes
Use firm apples like Granny Smith or Honeycrisp. Add Nutella or Oreo toppings for a fun twist. Store in fridge for up to 5 days or freeze individually for up to 2 months.
