Ingredients
  

Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
Cheesecake Layer
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
Caramel Apple Topping
  • 3 medium apples peeled and diced
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 tsp cinnamon
  • 2 tbsp caramel sauce plus more for drizzling

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into baking dish. Bake for 10 minutes, then let cool.
  3. In a bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time, and vanilla. Pour over cooled crust.
  4. In a saucepan, melt butter. Add diced apples, brown sugar, and cinnamon. Cook for 5–7 minutes until tender. Let cool slightly.
  5. Spoon apple mixture over cheesecake layer. Drizzle with caramel sauce.
  6. Bake for 25–30 minutes. Cool completely, then chill for at least 2 hours before slicing into bars.

Notes

Use firm apples like Granny Smith or Honeycrisp. Add Nutella or Oreo toppings for a fun twist. Store in fridge for up to 5 days or freeze individually for up to 2 months.
