  • 1.5 lbs sirloin steak cut into bite-sized tips
  • 2-3 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • salt and pepper to taste
For the Cheesy Rigatoni Parmesan Sauce
  • 12 oz rigatoni pasta
  • 3 tbsp butter
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 2 cups milk whole or 2%
  • 1 cup heavy cream
  • 1.5 cups Parmesan cheese grated
  • 1 cup mozzarella cheese shredded, optional
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • chopped parsley for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente (9–11 minutes). Drain and reserve ½ cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Season steak tips with Cajun seasoning, salt, and pepper. Sear for 3–4 minutes per side until caramelized and cooked through. Set aside.
  3. In the same skillet, reduce heat to medium. Melt butter, add garlic, and cook for 30 seconds. Stir in flour and cook for 1 minute.
  4. Gradually whisk in milk and heavy cream. Simmer until slightly thickened. Stir in Parmesan and mozzarella until melted. Add paprika and pepper.
  5. Add cooked rigatoni to the sauce and mix. Return steak tips to the pan and toss gently. Use reserved pasta water to adjust consistency if needed.
  6. Garnish with chopped parsley and serve hot.
