- Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente (9–11 minutes). Drain and reserve ½ cup of pasta water.
- Heat olive oil in a large skillet over medium-high heat. Season steak tips with Cajun seasoning, salt, and pepper. Sear for 3–4 minutes per side until caramelized and cooked through. Set aside.
- In the same skillet, reduce heat to medium. Melt butter, add garlic, and cook for 30 seconds. Stir in flour and cook for 1 minute.
- Gradually whisk in milk and heavy cream. Simmer until slightly thickened. Stir in Parmesan and mozzarella until melted. Add paprika and pepper.
- Add cooked rigatoni to the sauce and mix. Return steak tips to the pan and toss gently. Use reserved pasta water to adjust consistency if needed.
- Garnish with chopped parsley and serve hot.
