Bruschetta Dip Base
  • 2 cups ripe tomatoes finely diced (about 4–5 medium)
  • 1/2 cup fresh basil leaves chopped
  • 2 cloves garlic minced (use 2–3 cloves to taste)
  • 1/4 cup extra-virgin olive oil
  • 1 cup shredded mozzarella or mix with Parmesan
  • 4 oz cream cheese softened
  • salt and black pepper to taste

  • 1 loaf crusty bread baguette or sourdough, sliced and toasted

Method
 

  1. Prep the tomatoes and basil: Wash, core, and finely dice the tomatoes. Roughly chop the fresh basil leaves.
  2. Mix the base: In a bowl, combine tomatoes, basil, minced garlic, olive oil, salt, and pepper. Stir gently.
  3. Prepare cheese layer: In a separate bowl, beat the softened cream cheese with shredded mozzarella until smooth.
  4. Fold together: Gently combine the tomato mixture with the cheese mixture until well incorporated. Let sit for 15 minutes.
  5. Toast the bread: Slice loaf into ½-inch rounds, brush with olive oil, and toast until golden and crisp.
  6. Serve the dip: Spoon into a bowl and serve at room temp, or bake at 350°F (175°C) for 8–10 minutes for a hot version.

Notes

For a fun twist, turn the mixture into a cheese ball by chilling and rolling it in basil or nuts. This dip also pairs great on an antipasti board or with assorted crackers.
