  • 4 cups pancake mix
  • 3 cups water
  • 1 lb breakfast sausage browned
  • 1 1/2 cups fresh blueberries
  • 1/3 cup maple syrup

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13 baking dish with cooking spray.
  2. In a skillet, brown the breakfast sausage over medium heat until fully cooked. Drain excess grease.
  3. In a large mixing bowl, combine the pancake mix and water to form a batter.
  4. Stir in the cooked sausage, blueberries, and maple syrup. Optionally, reserve some sausage and blueberries for topping.
  5. Pour the mixture into the prepared baking dish. Add reserved toppings on top if desired.
  6. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool for 5 minutes before serving. Drizzle with additional maple syrup if desired.

Notes

To make ahead, assemble the night before, cover and refrigerate. Bake fresh in the morning. Leftovers reheat well and can be frozen for up to a month.
