  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter room temperature
  • 3/4 cup brown sugar packed
  • 2 eggs room temperature
  • 1/2 cup milk room temperature
  • 1/2 cup Biscoff spread
Decoration
  • 1/4 cup crushed Biscoff cookies for topping
  • optional Biscoff buttercream or melted spread for frosting or drizzle

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. In a large bowl, cream together butter and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well, then blend in the Biscoff spread.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 35–40 minutes or until a toothpick inserted comes out clean.
  8. Let cool completely. Top with Biscoff frosting or drizzle, and sprinkle crushed cookies before serving.

Notes

For extra depth, swirl a spoonful of Biscoff spread into the batter just before baking.
