- Slice the beef thinly and marinate briefly in a mixture of soy sauce and a pinch of cornstarch (optional for tenderness).
- Cook the noodles according to package instructions, then drain and set aside.
- Heat oil in a wok or skillet over high heat. Stir-fry the beef until browned and just cooked through. Remove and set aside.
- Add garlic and ginger to the pan. Stir-fry for 30 seconds, then add the vegetables. Cook until crisp-tender.
- Return the beef to the pan. Add noodles, soy sauce, and sesame oil. Toss everything together until well combined and heated through.
- Serve hot, topped with green onions or chili flakes if desired.
