Method
- Preheat the oven to 375°F (190°C) and butter the ramekins.
- Lightly toast the English muffins or brioche slices. Place one piece in each ramekin.
- In a skillet, sauté spinach or kale in butter until wilted. Place on top of the muffin base.
- Sprinkle cheese over the greens. Carefully crack one egg into each ramekin.
- Pour 1 tablespoon of cream or béchamel over each egg. Season with salt and pepper if desired.
- Bake for 12–15 minutes, until the whites are just set and yolks remain soft.
- Garnish with fresh herbs and serve immediately.
Notes
You can prepare the base layers ahead of time and bake just before serving. Try variations with smoked salmon, mushrooms, or a spicy cream sauce for a twist.
