Ingredients
  

Base Layer
  • 2 English muffins or brioche slices lightly toasted
Greens
  • 1 cup spinach or kale lightly sautéed in butter
Egg Layer
  • 2 fresh eggs room temperature
  • 2 tbsp cream or béchamel sauce for pouring over eggs
  • 1/4 cup cheese Gruyère or Parmesan, grated
Finishing Touches
  • 1 tbsp butter for sautéing and greasing ramekins
  • 1 tsp fresh herbs chives or dill, chopped

Method
 

  1. Preheat the oven to 375°F (190°C) and butter the ramekins.
  2. Lightly toast the English muffins or brioche slices. Place one piece in each ramekin.
  3. In a skillet, sauté spinach or kale in butter until wilted. Place on top of the muffin base.
  4. Sprinkle cheese over the greens. Carefully crack one egg into each ramekin.
  5. Pour 1 tablespoon of cream or béchamel over each egg. Season with salt and pepper if desired.
  6. Bake for 12–15 minutes, until the whites are just set and yolks remain soft.
  7. Garnish with fresh herbs and serve immediately.

Notes

You can prepare the base layers ahead of time and bake just before serving. Try variations with smoked salmon, mushrooms, or a spicy cream sauce for a twist.
