  • 4 cups cooked chicken shredded or diced
  • 8 strips bacon cooked and crumbled
  • 2 cups shredded cheese cheddar or mozzarella
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots optional
  • 1 tsp salt and pepper to taste
  • 0.5 cup breadcrumbs or crushed crackers for topping

Method
 

  1. Preheat your oven to 180°C (350°F). Grease a baking dish and set aside.
  2. In a skillet, cook the bacon until crispy. Remove, drain, and crumble.
  3. Using the bacon grease or olive oil, sauté diced onion and garlic until fragrant.
  4. In a large bowl, mix cooked chicken, crumbled bacon, sautéed onion and garlic, cream of chicken soup, sour cream, peas and carrots, salt, and pepper.
  5. Stir in half of the shredded cheese. Pour mixture into prepared baking dish.
  6. Top with remaining cheese and breadcrumbs or crushed crackers.
  7. Bake for 25–30 minutes, or until the top is golden and bubbly. Let cool slightly before serving.

Notes

You can make this casserole ahead of time or freeze it for later. Try using leftover rotisserie chicken to save time. Swap the breadcrumbs with crushed crackers for extra crunch!
