- Prep all ingredients: peel and dice squash and apples, shred turkey, chop onions and slice carrots.
- Layer squash, apples, carrots, green beans, and onions in the bottom of the slow cooker. Add thyme, sage, salt, and pepper.
- Top with shredded turkey and pour broth evenly over all ingredients.
- Cook on LOW for 6–8 hours until vegetables are tender and flavors have melded.
- In the last 30 minutes of cooking, stir in heavy cream and sprinkle cheddar cheese on top. Let it melt before serving.
- Serve warm, optionally garnished with fresh parsley.
Notes
Swap turkey for chicken if desired. Try a cracker topping during the last 15 minutes for extra crunch.
