  • 3 cups shredded cooked turkey leftovers or rotisserie work well
  • 2 cups butternut squash diced
  • 1 cup apples diced
  • 0.5 cup onions chopped
  • 1 cup carrots sliced
  • 1 cup green beans fresh or frozen
  • 1 tsp dried thyme
  • 1 tsp ground sage
  • 0.5 tsp salt adjust to taste
  • 0.5 tsp black pepper adjust to taste
  • 2 cups turkey or chicken broth
  • 0.5 cup heavy cream added at the end
  • 1 cup cheddar cheese shredded

Method
 

  1. Prep all ingredients: peel and dice squash and apples, shred turkey, chop onions and slice carrots.
  2. Layer squash, apples, carrots, green beans, and onions in the bottom of the slow cooker. Add thyme, sage, salt, and pepper.
  3. Top with shredded turkey and pour broth evenly over all ingredients.
  4. Cook on LOW for 6–8 hours until vegetables are tender and flavors have melded.
  5. In the last 30 minutes of cooking, stir in heavy cream and sprinkle cheddar cheese on top. Let it melt before serving.
  6. Serve warm, optionally garnished with fresh parsley.

Notes

Swap turkey for chicken if desired. Try a cracker topping during the last 15 minutes for extra crunch.
