  • 2 lbs chicken breasts or chicken thighs boneless and skinless
  • 1.5 lbs baby potatoes halved if large
  • 4 carrots sliced
  • 1 onion sliced
  • 1 can cream of chicken soup condensed
  • 1 cup chicken broth
  • 4 tbsp butter cut into pieces
  • 3 cloves garlic minced
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp parsley fresh chopped for garnish

Method
 

  1. Wash and prepare the potatoes, carrots, onions, and garlic. Season the chicken with salt, pepper, paprika, and garlic.
  2. Place the potatoes and carrots at the bottom of the crockpot.
  3. Add the seasoned chicken on top and spread the sliced onions over everything.
  4. In a mixing bowl, combine the cream of chicken soup with chicken broth and pour the mixture over the ingredients in the crockpot.
  5. Add butter pieces across the top, cover, and cook on low for 6–8 hours or high for 4–5 hours until the chicken is fork-tender and potatoes are soft.
  6. Garnish with fresh parsley before serving. Serve warm with crusty bread or a fresh salad.

Notes

This Amish Crockpot Meal can easily be customized with beef, sausage, or additional vegetables like peas, corn, or green beans. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
