  • 2 slices bread whole grain or sourdough recommended
  • 1 ripe avocado
  • 2 large eggs for poaching
  • 1 tbsp olive oil optional – for brushing bread
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper

  • red pepper flakes
  • fresh basil or parsley
  • lemon or lime juice freshly squeezed, optional

Method
 

  1. Preheat your air fryer to 400°F (200°C).
  2. Brush each slice of bread with olive oil (if using), and place them in the air fryer basket in a single layer. Toast for 3–5 minutes until golden and crisp.
  3. While the bread toasts, cut the avocado in half, remove the pit, scoop the flesh into a bowl, and mash. Add lemon or lime juice (optional), salt, and pepper to taste.
  4. To poach the eggs, bring a small pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Cook 3–4 minutes for runny yolks.
  5. Spread mashed avocado on each toasted bread slice. Gently place one poached egg on top of each slice.
  6. Top with optional garnishes like red pepper flakes, fresh herbs, or more seasoning. Serve immediately.

Notes

For a more Italian twist, drizzle with aged balsamic vinegar and chopped sun-dried tomatoes. Use the freshest eggs for clean poaching, and mash avocados just before serving for the best flavour and colour.
