Method
- Preheat your air fryer to 400°F (200°C).
- Brush each slice of bread with olive oil (if using), and place them in the air fryer basket in a single layer. Toast for 3–5 minutes until golden and crisp.
- While the bread toasts, cut the avocado in half, remove the pit, scoop the flesh into a bowl, and mash. Add lemon or lime juice (optional), salt, and pepper to taste.
- To poach the eggs, bring a small pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Cook 3–4 minutes for runny yolks.
- Spread mashed avocado on each toasted bread slice. Gently place one poached egg on top of each slice.
- Top with optional garnishes like red pepper flakes, fresh herbs, or more seasoning. Serve immediately.
Notes
For a more Italian twist, drizzle with aged balsamic vinegar and chopped sun-dried tomatoes. Use the freshest eggs for clean poaching, and mash avocados just before serving for the best flavour and colour.
