Potato Fritters
  • 2 large potatoes peeled or unpeeled, about 1 pound total
  • 1 small onion finely chopped or grated
  • 1 egg large
  • 2 tbsp all-purpose flour or gluten-free substitute
  • salt and pepper to taste
  • garlic powder or chopped herbs optional, for added flavor

Method
 

  1. Grate or finely chop the potatoes into a bowl. Press with a clean towel or paper towels to remove excess moisture.
  2. Add the chopped onion, beaten egg, flour, salt, pepper, and any optional seasonings. Mix until fully combined into a thick batter.
  3. Preheat your air fryer to 375°F (190°C). Shape about 2 tablespoons of the mixture into small fritter patties.
  4. Lightly oil the air fryer basket. Place the fritters in a single layer with space between them.
  5. Air fry for 10–12 minutes, flipping halfway through, until golden brown and crisp on the outside. Let cool slightly before serving.
