Main Ingredients
  • 4 bone-in, skin-on chicken thighs or a mix of thighs and drumsticks
  • 1.5 pounds small potatoes Yukon Gold or baby potatoes
  • 1 large lemon plus extra wedges for serving
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme or lemon-thyme if available
  • 0.5 tsp dried rosemary optional
  • salt and black pepper to taste
  • fresh parsley or dill for garnish, optional
  • crumbled feta cheese optional, for serving

Method
 

  1. Wash and dry potatoes. Cut large ones in half. Pat chicken skin dry.
  2. In a bowl, toss potatoes with half the olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
  3. In another bowl, rub chicken with remaining oil, garlic, herbs, salt, pepper, and lemon juice.
  4. Preheat air fryer to 380°F (195°C) for 5 minutes.
  5. Place potatoes in air fryer basket. Nestle chicken thighs (skin side up) on top.
  6. Air fry for 25–30 minutes. Toss potatoes and rearrange chicken halfway through.
  7. Check internal temp (165°F/74°C). Garnish with herbs and optional feta before serving with lemon wedges.

Notes

You can add other vegetables like zucchini or bell pepper in the last 10–12 minutes of cooking. Leftovers reheat well in the air fryer at 350°F for 5–10 minutes.
