Method
- Wash and dry potatoes. Cut large ones in half. Pat chicken skin dry.
- In a bowl, toss potatoes with half the olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
- In another bowl, rub chicken with remaining oil, garlic, herbs, salt, pepper, and lemon juice.
- Preheat air fryer to 380°F (195°C) for 5 minutes.
- Place potatoes in air fryer basket. Nestle chicken thighs (skin side up) on top.
- Air fry for 25–30 minutes. Toss potatoes and rearrange chicken halfway through.
- Check internal temp (165°F/74°C). Garnish with herbs and optional feta before serving with lemon wedges.
Notes
You can add other vegetables like zucchini or bell pepper in the last 10–12 minutes of cooking. Leftovers reheat well in the air fryer at 350°F for 5–10 minutes.
