Description

These Crispy Air Fryer Breakfast Egg Cups are the ultimate solution for busy mornings. Loaded with protein, customizable with your favorite fillings, and perfectly cooked in the air fryer, they’re a healthy, low-carb, and kid-friendly way to kickstart your day. Quick to prep, easy to store, and simply satisfying!

Ingredients

  • Base Ingredients
  • Large eggs (6–8 recommended)

  • Heavy cream or whole milk

  • Salt and pepper, to taste

  • Shredded cheese (cheddar or mozzarella)

  • Optional Add-ins
  • Diced ham, cooked sausage, or crumbled bacon

  • Chopped spinach or kale

  • Diced bell peppers

  • Sliced mushrooms

  • Chopped green onions

Instructions

  • Preheat the Air Fryer
Set your air fryer to 300°F (150°C) and let it preheat while you prepare your ingredients. This ensures crispy edges on your egg cups.
  • Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, a splash of heavy cream or milk, salt, and pepper until well combined.

  • Add Mix-ins
Stir in your choice of shredded cheese and optional add-ins like diced vegetables or cooked meats for added flavor and texture.

  • Fill the Molds
Lightly grease silicone muffin cups or a non-stick muffin tin. Pour the egg mixture into each mold, filling them about ¾ full to allow space for rising.

  • Air Fry the Egg Cups
Place the molds in the air fryer basket. Cook at 300°F for 8–10 minutes, or until the eggs are set and the tops are slightly golden.

  • Cool and Serve
Let the egg cups cool for 2–3 minutes before removing. Enjoy them fresh or refrigerate for a grab-and-go breakfast during the week.

Notes

  • For meal prep: Make a double batch and store in the fridge for up to 4–5 days, or freeze for up to 2–3 months.

  • Use silicone molds for easy release and no sticking.

  • Adjust the mix-ins to fit your dietary needs—skip the meat for vegetarian versions or use dairy-free cheese if needed.

  • To reheat: Microwave for 30 seconds or air fry at 300°F for 1–2 minutes.
