- 3 ripe bananas, mashed 🍌
- ½ cup (120ml) unsweetened almond milk 🥛
- ⅓ cup (80ml) melted coconut oil 🥥
- ½ cup (100g) coconut sugar or brown sugar 🍯
- 1 tsp vanilla extract 🌿
- 1 ½ cups (190g) all-purpose flour 🌾
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt 🧂
- ½ tsp cinnamon 🌿
- ½ cup chopped walnuts or chocolate chips (optional) 🍫🌰
Instructions
- Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- Mash bananas in a large bowl. Stir in almond milk, melted coconut oil, sugar, and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Combine wet and dry ingredients, mixing gently until just combined (do not overmix).
- Fold in walnuts or chocolate chips if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack. Slice and enjoy!
