For the Meatloaf:
- 2 lbs ground beef (80/20 blend) 🥩
- 1 packet Lipton Onion Soup Mix 🧅
- ¾ cup breadcrumbs 🌾
- 2 large eggs 🥚
- ½ cup whole milk 🥛
- 1 tbsp Worcestershire sauce
- ½ tsp garlic powder 🧄
- ½ tsp smoked paprika 🌶️
- ½ tsp salt 🧂
- ½ tsp black pepper 🌿
For the BBQ Glaze:
- ½ cup BBQ sauce 🍖
- 2 tbsp brown sugar 🍯
- 1 tbsp apple cider vinegar 🍏
Instructions
- Preheat the smoker – Set your smoker to 225°F (107°C) and add your preferred wood chips (hickory, apple, or mesquite).
- Prepare the meatloaf – In a large bowl, mix ground beef, onion soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper. Form into a loaf shape.
- Smoke the meatloaf – Place the meatloaf directly on the smoker grates or on a wire rack. Smoke for 2-3 hours, until the internal temperature reaches 150°F (65°C).
- Add the glaze – Mix BBQ sauce, brown sugar, and apple cider vinegar. Brush over the meatloaf and continue smoking for another 30 minutes, until the internal temp reaches 160°F (71°C).
- Rest & serve – Let the meatloaf rest for 10 minutes, then slice and enjoy with your favorite sides!
