- 2 cups chicken or vegetable broth 🍲

- ½ cup diced bell peppers (red, yellow, or green) 🌶️
- ½ small onion, finely chopped 🧅
- 2 cloves garlic, minced 🧄
- 1 tsp smoked paprika 🌿
- ½ tsp cumin 🌿
- ¼ tsp cayenne pepper (optional for extra heat) 🔥
- ½ tsp salt 🧂
- ¼ tsp black pepper 🌿
- 1 tbsp tomato paste 🍅
- ½ cup diced tomatoes 🍅
- 1 tbsp fresh parsley or cilantro, chopped 🌿
Instructions
- Sauté the aromatics – In a saucepan, heat olive oil over medium heat. Add onions, garlic, and bell peppers. Sauté for 3-4 minutes until softened.
- Toast the spices – Stir in smoked paprika, cumin, cayenne, salt, and black pepper. Cook for 1 minute to release the flavors.
- Cook the rice – Add rice, tomato paste, and diced tomatoes, stirring to coat. Pour in broth, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until liquid is absorbed.
- Fluff & garnish – Remove from heat, let sit for 5 minutes, then fluff with a fork. Stir in fresh parsley or cilantro.
