  • ½ tsp cumin 🌿
  • ¼ tsp cayenne pepper (optional for extra heat) 🔥
  • ½ tsp salt 🧂
  • ¼ tsp black pepper 🌿
  • 1 tbsp tomato paste 🍅
  • ½ cup diced tomatoes 🍅
  • 1 tbsp fresh parsley or cilantro, chopped 🌿

Instructions

  • Sauté the aromatics – In a saucepan, heat olive oil over medium heat. Add onions, garlic, and bell peppers. Sauté for 3-4 minutes until softened.
  • Toast the spices – Stir in smoked paprika, cumin, cayenne, salt, and black pepper. Cook for 1 minute to release the flavors.
  • Cook the rice – Add rice, tomato paste, and diced tomatoes, stirring to coat. Pour in broth, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until liquid is absorbed.
  • Fluff & garnish – Remove from heat, let sit for 5 minutes, then fluff with a fork. Stir in fresh parsley or cilantro.
