  • 1 lb (500g) boneless chicken breast or thighs, diced
  • 2 tbsp butter
  • 1/2 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup tomato sauce
  • 1/2 cup heavy cream
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (optional)
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Steamed vegetables (peas, bell peppers, or broccoli), optional
  • Fresh cilantro, for garnish

Instructions

    • Prep the chicken:
      Season diced chicken with salt, pepper, and turmeric. Set aside.

  • Sauté aromatics:
    In a large skillet over medium heat, melt the butter. Add chopped onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant and soft.

  • Cook the chicken:
    Add the chicken to the pan and cook until browned on all sides, about 6–8 minutes.

  • Make the sauce:
    Stir in tomato sauce, garam masala, and chili powder. Reduce heat and simmer for 5 minutes to blend flavors.

  • Add the cream:
    Pour in the heavy cream, stir well, and let it simmer for another 5 minutes until the sauce thickens and the chicken is fully cooked.

 

  • Finish and serve:
    Taste and adjust seasoning if needed. Serve over warm rice with steamed vegetables. Garnish with fresh cilantro if desired.
