Description

  • 1 cup (240g) mashed ripe bananas (about 2 bananas) 🍌
  • ¾ cup (180g) pumpkin purée 🎃
  • ½ cup (120ml) melted coconut oil or butter 🧈
  • ½ cup (100g) brown sugar 🍯
  • 2 large eggs 🥚
  • 1 tsp vanilla extract 🌿
  • 1 ¾ cups (220g) all-purpose flour 🌾
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt 🧂
  • 1 tsp cinnamon 🌿
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ¼ tsp cloves (optional)
  • ½ cup chopped pecans or chocolate chips (optional) 🍫🌰

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, mash the bananas and mix in pumpkin purée, melted coconut oil, sugar, eggs, and vanilla. Stir until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Gently mix the dry ingredients into the wet ingredients, stirring just until combined (don’t overmix).
  5. Fold in pecans or chocolate chips, if using.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool for 10 minutes in the pan before transferring to a wire rack. Slice and enjoy!
