Description
These soft, buttery brioche dinner rolls are light, fluffy, and slightly sweet, making them the perfect side for any meal. With a rich, tender crumb and golden crust, these homemade rolls are surprisingly easy to make!

- 3 ½ cups (440g) all-purpose flour 🌾
- ¼ cup (50g) granulated sugar 🍚
- 1 packet (2 ¼ tsp) active dry yeast 🌿
- ½ cup (120ml) warm milk (110°F/45°C) 🥛
- 3 large eggs 🥚
- ½ tsp salt 🧂
- ½ cup (115g) unsalted butter, softened 🧈
- 1 egg yolk + 1 tbsp milk (for egg wash) 🥄
Instructions
- Activate the yeast: In a small bowl, mix warm milk, yeast, and 1 tsp of sugar. Let sit for 5–10 minutes until foamy.
- Make the dough: In a large mixing bowl, combine flour, sugar, and salt. Add eggs and yeast mixture, then mix until a rough dough forms.
- Incorporate butter: Gradually add softened butter, kneading until smooth and elastic (about 8–10 minutes). If using a stand mixer, use the dough hook on medium speed.
- First rise: Place the dough in a greased bowl, cover, and let rise in a warm place for 1½–2 hours, or until doubled in size.
- Shape the rolls: Punch down the dough and divide it into 12–16 equal pieces. Roll each piece into a smooth ball and place on a lined baking sheet.
- Second rise: Cover and let rise again for 45 minutes, until puffy.
- Bake: Preheat oven to 375°F (190°C). Brush the rolls with egg wash and bake for 15–18 minutes, or until golden brown.
- Serve warm! Enjoy with butter, honey, or jam.
