Crispy Chocolate Layers:

  • 12 ounces semi-sweet chocolate chips, divided
  • 11 ounces butterscotch chips, divided
  • 1 cup creamy peanut butter, divided
  • 3 cups Cocoa Pebbles cereal, divided

Nougat Layer:

  • ¼ cup unsalted butter
  • 1 cup granulated sugar
  • ¼ cup evaporated milk
  • 7 ounces marshmallow creme
  • ¼ cup creamy peanut butter
  • 1½ cups roasted lightly salted peanuts, coarsely chopped
  • 1 teaspoon vanilla extract

Caramel Layer:

 

  • 14 ounces caramel candies, unwrapped
  • ¼ cup heavy cream

Instructions

Step 1: Make the Crunchy Base

  1. Line an 8×8-inch baking pan with parchment paper.

  2. In a small saucepan over medium heat, combine peanut butter, honey (or corn syrup), and sugar. Stir until smooth and just starting to bubble.

  3. Remove from heat and stir in vanilla extract.

  4. Pour over the Rice Krispies and mix well to coat.

  5. Press firmly into the lined pan to create an even layer. Pop it in the fridge while you prep the caramel.

Step 2: Create the Caramel Peanut Layer

  1. In a microwave-safe bowl, heat the caramels and heavy cream in 30-second intervals, stirring in between, until melted and smooth.

  2. Stir in the chopped peanuts, then pour over the crunchy base, spreading evenly.

  3. Place the pan back in the fridge to let the caramel firm up (about 15-20 minutes).

Step 3: Top with Chocolate

  1. In another microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.

  2. Pour over the caramel layer and spread evenly with a spatula.

  3. Let the bars chill in the fridge for at least 1 hour, or until set.
