Crispy Baked Parmesan Zucchini – Easy, Cheesy, & Healthy!

Description

A cheesy, crunchy, low-carb side dish that’s baked to golden perfection in under 30 minutes. Kid-approved and totally guilt-free!


Ingredients

  • 3 medium zucchinis, sliced into ¼” rounds
  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs (or keto option: crushed pork rinds)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste
  • 2 tbsp olive oil (or cooking spray)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a shallow bowl, mix Parmesan, panko, garlic powder, onion powder, salt, and pepper.

  3. Toss zucchini slices in olive oil, then coat in the cheese-crumb mixture. Press gently to adhere.

  4. Arrange on the baking sheet in a single layer.

  5. Bake for 10 minutes, flip, and bake another 10 minutes until golden brown and crispy.

Notes

  • For extra crispiness, broil the last 2 minutes.
