A cheesy, crunchy, low-carb side dish that’s baked to golden perfection in under 30 minutes. Kid-approved and totally guilt-free!
Ingredients

- 3 medium zucchinis, sliced into ¼” rounds
- ½ cup grated Parmesan cheese
- ½ cup panko breadcrumbs (or keto option: crushed pork rinds)
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- 2 tbsp olive oil (or cooking spray)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a shallow bowl, mix Parmesan, panko, garlic powder, onion powder, salt, and pepper.
Toss zucchini slices in olive oil, then coat in the cheese-crumb mixture. Press gently to adhere.
Arrange on the baking sheet in a single layer.
Bake for 10 minutes, flip, and bake another 10 minutes until golden brown and crispy.

Notes
- For extra crispiness, broil the last 2 minutes.
- Add chili flakes if you want a spicy version.
