Ingredients

  • Chicken: 2 boneless, skinless chicken breasts (about 1 pound)
  • Rice: 1 cup of cooked white or brown rice (you can also use wild rice for a nuttier flavor)
  • Chicken Broth: 4 cups (low-sodium recommended)
  • Vegetables: 1 onion, diced; 2 carrots, peeled and diced; 2 celery stalks, diced
  • Garlic: 4 cloves, minced
  • Tomatoes: 1 can of diced tomatoes (14.5 ounces)
  • Chili Paste or Hot Sauce: 1-2 tablespoons (adjust based on spice tolerance)

Instructions

Preparing the Ingredients

  1. Cook the Rice: Prepare the rice according to package instructions. Set aside.
  2. Dice the Vegetables: Chop the onion, carrots, celery, and garlic.
  3. Season the Chicken: Rub the chicken breasts with a mixture of salt, pepper, cumin, and paprika.

Cooking the Chicken

  1. Heat a large pot or Dutch oven over medium heat. Add a drizzle of olive oil.
  2. Sear the chicken breasts for 3-4 minutes per side until golden brown. Remove the chicken and set aside (it will finish cooking in the soup).

Making the Soup Base

  1. In the same pot, add more olive oil if needed and sauté the onion, carrots, and celery until softened (about 5 minutes).
  2. Add the garlic and cook for an additional 30 seconds until fragrant.
  3. Stir in the chili powder, cumin, and paprika to toast the spices for 1 minute.
  4. Pour in the chicken broth, diced tomatoes, and chili paste or hot sauce.
