- 3 ripe bananas, mashed 🍌
- 3 large eggs 🥚
- ¼ cup (60ml) maple syrup or honey 🍯
- 1 tsp vanilla extract 🌿
- 2 ½ cups (250g) almond flour 🌰
- 1 tsp baking soda
- ½ tsp cinnamon 🌿
- ¼ tsp salt 🧂
- ¼ cup (60ml) melted coconut oil or butter 🧈🥥
- ½ cup chopped walnuts or chocolate chips (optional) 🍫🌰
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it well.
- Mash bananas in a large bowl. Add eggs, maple syrup (or honey), vanilla, and melted coconut oil. Stir until smooth.
- In a separate bowl, whisk together almond flour, baking soda, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture, stirring until just combined.
- Fold in walnuts or chocolate chips, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes before transferring to a wire rack. Slice and enjoy!
